Fermented in French oak barrels of 5 hectoliters. Stepping twice a day during the 8 days of fermentation. Aged for 24 months in French oak Bordeaux barrels, racking every 4 months.
Tasting note
Ruby red color of great intensity on the edges, tending towards a deep cherry-red in the center of the glass. Aroma of great complexity and elegance, with notes of scrubland, balsamic, aromatic herbs and great fruitiness (red fruits, cassis) forming a suggestive set. In the mouth it is very concentrated and tasty, with marked noble tannins and an elegant fleshy fruitiness that fills the mouth. In the aftertaste the fruity notes flow perfectly assembled with hints of coffee, toast and high quality wood.
