Since 2010 we have been producing a white wine for aging (which we initially called Ariana Blanco y Fermentado en Barrica, and now Lías), long lasting (5-6 years minimum), for which Malvasía Volcánica is particularly suitable due to its high alcohol content. and natural acidity. It is one of our most awarded wines. After cooling the clusters, we carry out a light crushing and destemming, to proceed to a skin maceration of six hours, after which we press the grapes. The must, once decanted for 12-18 hours, begins fermentation in a steel tank. Once the virulent phase has elapsed, it is transferred to new 500-litre French oak barrels, where the fermentation ends, and it is thus kept on its lees by "battonage" (stirring the wine daily so that the dead yeasts remain in suspension), during a minimum of three months. In order to avoid excessive wood production, the wine is transferred to a tank, where it remains with its lees, which are stirred several times a day automatically. It stays that way for another 12 months, for a minimum of nine more months. After a slight clarification and filtering, it is bottled. After another three months in the bottle, it is ready for shipment. Aging – 3 months in barrel and a total of 15 months on its lees + 3 more months in the bottle.
Tasting note
Colour: Straw yellow, due to its upbringing, clean and bright. In time it will turn to gold tones. Aroma: deep, ripe, balsamic, reminiscent of roses, orange blossom, eucalyptus, slightly toasted. Complex and elegant wine to discover Mouth: Good attack, unctuousness and volume enhance its persistence, with a finish of citrus freshness.
