Elaboration
Elaboration Red. 14 months in French oak barrels and 12 months in bottle. Each variety is vinified separately. Fermentation at a controlled temperature below 25ºC, with maceration between 2 and 3 weeks depending on each variety. Two daily turbopigeage, and two deltage during the maceration, at one and two thirds of the fermentation. In the uncover, the flower wine is separated from the press. For Las Ocho only flower wine is used. A 75% of the wine destined for Las Ocho is transferred to 220-liter French oak barrels, while a 25 % is kept in tanks. Before bottling, the final blend is made by mixing these two proportions, while the percentage of each variety depends on the vintage.
Tasting note
Color: Ruby red with an intense layer. Clean and bright. Nose: Fruity and balsamic. Intense and elegant. Vanilla and toasted. Combination of eight harmonized varieties in oak barrels from the Allier forests. Mouth: Powerful and meaty. Balanced throughout the palate due to its ripe and round tannins. Balsamic hints of vanilla, coffee and chocolate, with a subtle mineral touch.
