Vinification: The grapes were covered with a 10-30% of whole bunches and mixing varieties (depending on the soil), seeking to enhance the aromatic part and provide tension and emotion in the mouth with the ripe scrapes. Fermentation was carried out with native yeasts using vat feet. During the maceration, the temperature and the incubation times were played to perform a precise extraction by infusion. The malolactic was carried out partly in barrels and partly in storage. Aging: Aging for 18 months was made with a 70% in French oak barrels of one and two wines, a 15% in 600-liter French oak barrels and the remaining 15% in 1,200-liter foudres. The wine was lightly filtered before bottling.
Tasting note
View: Cherry red with a medium layer with a purplish edge. Nose: Good intensity of red fruits wrapped in flowers on a background of spices. Very fresh and complex and with a marked fruity character. Mouth: It begins with a sweet attack, with a silky, caressing texture, which opens the way to a fresh and fruity center marked by currants and cassis. The finish is tasty, enveloping and leaves us with a mineral memory at the end. Good balance in the mouth between tannins and a marked freshness of the stalk. Nice and long drink, it has a good aging capacity.
