Vinification: All varieties are mixed before fermenting and covered with a 5-15% of whole bunches, seeking to enhance the aromatic part and provide tension. Fermentation was carried out with native yeasts using vat feet. During the maceration, the temperature and the incubation times were played to perform a delicate and precise extraction by infusion. The malolactic was carried out entirely spontaneously in new barrels and one wine. Aging: Aging for 20 months in new French oak barrels (16%) and the rest in barrels of one and two wines. A slight filtration was carried out before bottling.
Tasting note
View: Cherry red color with purple edges. Nose: From the beginning it shows notes of fresh red fruit, raspberries, cherries with contributions of violets and blackberries on a background of scrubland, rosemary and pepper. Mouth: On the palate it is smooth and elegant, with a good structure, with silky and very mineral tannins. It exhibits a good balance again of cherry and pepper notes. An elegant wine that promises longevity.
