Harvest: From a selection of farms in the Ribera del Duero between 750 and 1,000 meters of altitude. Harvested in 10 kilogram boxes, carefully. The grapes arrive whole and intact at the winery. Elaboration: Manual selection table. Gravity movement of the grape. Fermentation with native yeasts. Aging: 12 months in 225-liter French oak barrels. 30 wines of different characteristics are obtained, depending on the origin of the grape and the barrel, which make up the final wine assembly. Part of them with malolactic fermentation in barrels. Bottled in April 2012. 40 months of bottle aging. Clarified with natural egg white.
Tasting note
Visual Phase: Cherry color, with very covered and bright garnet reflections. Olfactory Phase: Black fruit in season, figs, very ripe nose, development of tertiary aromas, spices, hazelnut, tobacco, toasted, caramel, lots of coffee, wet earth and undergrowth. Taste Phase: Fleshy on the palate, sweet and ripe tannins, structured and enveloping, very full of flavors. Glyceric, unctuous. Toasted present in the mouth. Long and persistent finish in the mouth.
