Harvest at dawn to preserve the dew that refreshes the grape. Cold maceration and low temperature fermentation. White wine aged for 4 months in French oak barrels of 2 or 3 years. Aging with lees.

Consumption: Perfect for the next 3 years as a faithful companion to processed fish, white meat, and also as an aperitif or a final drink. Ideal with blue cheeses.
