Harvested by hand at their optimum point of maturation in 15 kg boxes. The bunches go directly to the press through a selection table. Light and slow pressing keeping the grape fresh. Natural decanting for one night and toned directly into French oak barrels with a 12-month stay. Alcoholic fermentation takes place in this new oak with light sticks at the end of fermentation. A single racking at 6 months to maintain the freshness and elegance of the wine.
Tasting note
Great clarity and brilliance, straw yellow with golden edges. High aromatic intensity. The first connotations are of pastries, combined with high hints of flowers such as jasmine, figs and roasted apple, combined with hints of dried fruits. Unctuous sensation in the mouth that counteracts with points of acidity that give a sensation of freshness at all times in which the wine remains in the mouth. The aftertaste shows the hints of pastries and smoked that had been detected on the nose.
