Manual harvesting, vinification and aging of its varieties separately: Monastrell: 8 months in 500 l French oak barrels. Giró: 8 months in 500 l French oak barrels. Garnatxa: 6 months in a 4000 l vat. Paquito el Chocolatero pays homage to the renowned paso doble and his composer. The production of Garnatxa Tintorera belongs to and comes from the micro-vineyard of his son, Gustavo Pascual.
