Name: Pago Aylés Description: The Senda de Leñadores plot is one of the driest parts with the greatest clay component of the estate, which translates into wines with greater power and structure, without sacrificing elegance. After the experience in previous years, it has been verified that a higher production shows a higher quality by having a better foliar balance and a slower maturation. Climate: Extreme Continental. Yield: 4,000 kilograms per hectare. Harvest: Harvest at night to take advantage of the thermal jump and for the grape to enter the winery in optimal conditions. The harvest took place under perfect conditions. The first extractions, controlled more precisely than ever, offered an excellent material: generously concentrated musts of exceptional richness. Vinification: Alcoholic fermentation separately, at a controlled temperature and with indigenous yeasts. Ageing: Malolactic fermentation takes place in French oak barrels, always used, to preserve the mineral character. It remains in the barrel until completing the 10 months of aging.
Tasting note
View: Ruby red color. Nose: Very expressive on the nose, with a wide range of aromas; red fruits, cardamom, peppers, cocoa, a fine minerality and a certain earthiness can be appreciated. Palate: On the palate it appears as a full-bodied wine that combines power and elegance. It has a very good acidity, resulting in a very fresh wine; High quality tannins, round with great balance. Persistent and with a very long finish. Serving temperature: It is recommended to serve at 16 ºC. Pairing: Ideal to accompany all kinds of meats, white, red, game meats. It also goes well with stews, stews and cured cheeses.
